Hardneck varieties produce a scape (flower stalk). Scapes are a delicious addition to a stir fry! Just chop the same way you would a scallion. They have a true garlic taste when eaten. Scapes should be removed when young and tender. Usually in the month of June. Hardnecks do not store as well as Softnecks, so keep this in mind if you plan to make your harvest last. Hardnecks generally do well in cold climates.
Please also note that orders are taken when we harvest each garlic variety, but will not ship to you until the garlic is dried, cleaned and trimmed. Shipping is typically August/September depending on variety.
